Main course
Yóu fàn is Taiwanese sticky rice that you cook in a pot with shiitake, soy sauce and sesame oil. The rice tastes savory and nutty, and the toasted peanuts add bite. In Taiwan it often appears on the table at celebrations.

Ingredients
- 300 g sticky rice
- 50 g dried shiitake mushrooms
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 2 scallions, finely chopped
- 2 garlic cloves, finely chopped
- 1 piece ginger (about 2 cm), finely chopped
- 100 g roasted peanuts
- 2 tbsp vegetable oil
- 500 ml water
- Salt to taste
Instructions
- Soak the sticky rice as directed on the package, ideally overnight.
- Soak the dried shiitake in warm water until soft, then chop them.
- Heat the oil in a pot and fry the garlic, ginger and scallions in it.
- Add the shiitake and keep frying.
- Drain the sticky rice, add it to the pot and stir well.
- Add the dark soy sauce, light soy sauce, oyster sauce and sesame oil and mix everything well.
- Add the water and bring to a boil, then reduce the heat and simmer the rice for 20 minutes, until it has absorbed the water and is soft.
- Fold the roasted peanuts into the finished rice.
- Let it rest for a few minutes before serving.
