Yum Neua is a Thai salad of seared beef steak, cucumber, tomato, and fresh herbs. The dressing of fish sauce, lime juice, and chili tastes hot, sour, and salty.

Ingredients
- 400 g beef steak (such as flank steak)
- 1 tbsp vegetable oil
- Salt and pepper to taste
- 2 shallots, thinly sliced
- 1 handful fresh mint, roughly chopped
- 1 handful fresh cilantro, roughly chopped
- 2 scallions, cut into thin slices
- 2 tomatoes, cut into wedges
- 1 cucumber, halved and sliced
- 2 tbsp fish sauce
- Juice of 2 limes
- 1-2 tsp sugar
- 1-3 fresh red chilies, chopped to taste
Instructions
- Rub the beef with oil and season with salt and pepper.
- Sear the steak on both sides in a hot pan to your liking (medium rare recommended).
- Take the steak off the heat and let it rest for a few minutes before slicing it thin.
- In a large bowl, mix the sliced shallots, mint, cilantro, scallions, tomatoes, and cucumber.
- In a small bowl, whisk the fish sauce, lime juice, sugar, and chopped chilies into a dressing.
- Pour the dressing over the salad mixture and stir well.
- Add the sliced meat and toss everything gently.
- Divide the salad among plates and serve right away.
