Main course
Zaru soba are cold buckwheat noodles that you arrange on a bamboo tray and dip in tsuyu dipping sauce. Toasted sesame seeds add a nutty aroma, and nori and scallions add a fresh kick. The dish suits warm days.

Ingredients
- 200 g soba noodles
- 200 ml dipping sauce (tsuyu)
- 1 tbsp sesame seeds
- 2 sheets nori
- 2 scallions, thinly sliced
- Wasabi to taste
Instructions
- Cook the soba noodles in a large pot of boiling water for about 4 to 5 minutes, until al dente.
- Drain the noodles in a colander and rinse them thoroughly under cold water to stop the cooking.
- Arrange the cold soba noodles on a zaru or a large plate.
- Pour the dipping sauce into a small bowl.
- Toast the sesame seeds lightly in a dry pan and sprinkle them over the soba noodles.
- Add the scallions and the nori sheets, cut into strips.
- Serve the zaru soba with wasabi as a spicy accompaniment.
