Zenzai is a traditional Japanese sweet made of a sweet red bean soup and sticky rice cakes (mochi). It is especially popular in the cold winter months and is often served at New Year.

Ingredients

  • 200 g azuki beans
  • 150 g sugar
  • 1 pinch salt
  • 4 pieces ready-made mochi (rice cakes)
  • 1.5 liters water for soaking and cooking

Instructions

  1. Soak the azuki beans in water overnight.
  2. Pour off the soaking water and put the beans in a pot with fresh water. Bring to a boil and simmer for about 1 hour, until the beans are soft.
  3. Pour off the excess water and return the beans to the pot with the sugar and a pinch of salt. Keep simmering, stirring constantly, until a thick soup forms.
  4. Meanwhile, heat the mochi in a pan or toaster until they puff up and brown lightly.
  5. Ladle the hot bean soup into bowls and top each with a mochi.
  6. Serve hot.
