Zhà ròu bāo are fried yeast buns from China, filled with ground pork, ginger, soy sauce and oyster sauce. You fry them until the crust is golden brown and crisp. Inside, the dough stays soft and the filling juicy.

Ingredients
- 500 g ground pork
- 1 small bunch of scallions, chopped
- 2 garlic cloves, finely chopped
- 1 piece ginger (about 2 cm), finely chopped
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1/4 tsp white pepper
- 500 g flour
- 250 ml warm water
- 1 tsp dry yeast
- 1 tsp sugar
- 2 tsp salt
- Oil for deep-frying
Instructions
- Make the dough: Mix the flour, dry yeast, sugar and salt in a large bowl. Slowly add the warm water and knead until you have a smooth dough. Cover the bowl and let the dough rise in a warm place for 30 minutes.
- For the filling: In a bowl, mix the ground pork, scallions, garlic, ginger, soy sauce, oyster sauce, sesame oil, sugar and white pepper.
- Divide the risen dough into 10 equal pieces. Roll each piece into a flat disc and put one tenth of the meat filling (about 50 g) in the center.
- Seal the dough discs by pulling the edges together and pressing firmly, so no filling can leak out.
- Heat the oil in a deep pot or deep fryer to 180°C (350°F). Fry the buns in small batches until golden brown and crisp, about 5-7 minutes.
- Let the fried buns drain on paper towels before you serve them.
