Zha Zi Ji is fried chicken from Cantonese cooking, made here with chicken wings. You marinate the wings in soy sauce, Shaoxing wine and ginger and coat them in potato starch. In hot oil they turn crisp outside and stay juicy inside.

Ingredients
- 1 kg chicken wings
- 120 g potato starch
- 3 garlic cloves, finely chopped
- 1 piece of ginger (about 2 cm), finely chopped
- 2 scallions, cut into rings
- 2 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp white vinegar
- 1 tsp sugar
- Salt to taste
- Pepper to taste
- Oil for deep-frying
Instructions
- Wash the chicken wings and pat them dry.
- In a bowl, stir the soy sauce, Shaoxing wine, white vinegar, sugar, salt, pepper, garlic and ginger into a marinade.
- Marinate the chicken wings in the fridge for at least 1 hour.
- Heat the oil in a deep pot or fryer to 180 °C.
- Take the marinated wings out of the marinade and shake off the excess liquid.
- Roll the wings in the potato starch until completely coated.
- Fry the coated wings in batches in the hot oil for about 8-10 minutes, until golden brown and crisp.
- Drain the fried wings on paper towels.
- Garnish with scallions and serve hot.
