Gilgeori Toast (길거리 토스트) – Toast with Vegetable Omelet

Gilgeori means street. Snack stalls in Seoul sell gilgeori toast in the morning at bus and subway stops. You toast two slices of sandwich bread in butter on the hot griddle and fry a thick omelet next to it, with cabbage, carrot and scallions, in the size of the bread. In between go cooked ham, a slice of cheese, ketchup and a pinch of sugar. The sugar on the cheese surprises you on the first bite and belongs to the Seoul original.

Cut the cabbage as fine as you can. Coarse strips do not hold the omelet together. Shape the egg mixture in the pan into a square with the spatula so it fits the slice of bread. To take it with you, wrap the toast halfway in parchment paper and eat it out of hand. In the scrambled egg version, you fill a soft brioche bun with creamy scrambled eggs, cheese and sweet mayonnaise. You find this form online as an egg drop sandwich.

A rolled omelet with vegetables for rice is Gyeran Mari. You bake sweet street food with egg using the recipe for Gyeran Bbang. Spicy and savory is Tteokbokki.

Ingredients

    For the omelet:

    • 4 eggs
    • 100 g cabbage, very finely shaved
    • 1 small carrot (60 g), finely grated
    • 2 scallions, in thin rings
    • 1/4 tsp salt
    • 1 tsp vegetable oil

    For the toasts:

    • 8 slices sandwich bread
    • 30 g butter
    • 4 slices cooked ham
    • 4 slices cheddar
    • 4 tbsp ketchup
    • 4 tsp sugar

    Instructions

    1. Whisk the eggs with the salt. Mix in the cabbage, carrot and scallions.
    2. Heat a teaspoon of butter in a large pan over medium heat. Toast 2 slices of bread in it for 1 to 2 minutes per side until golden brown and take them out.
    3. Add a little oil to the pan. Pour in a quarter of the egg mixture and push it with the spatula into a square the size of the bread.
    4. Fry the omelet for 2 minutes, turn it and fry it for 1 more minute, until set.
    5. Put the omelet on a slice of bread. Top it with a slice of ham and a slice of cheese.
    6. Sprinkle 1 tsp sugar over the cheese and add 1 tbsp ketchup. Cover the toast with the second slice of bread and press it down lightly.
    7. Repeat the steps for the other three toasts. Halve them diagonally and serve them warm.
