Thai Roti (โรตีกล้วย) – Banana Pancake with Condensed Milk

Roti gluay is baked by vendors in Thailand at small carts with a round iron plate. They stretch a ball of dough into a thin sheet, put banana slices and egg on it and fold the sheet into a packet. The packet fries golden brown in butter or margarine, then they cut it into squares and pour sweetened condensed milk over it.

You knead the dough from flour, egg, water and a little condensed milk for 10 minutes, until smooth. The balls then rest for 2 hours in oil. After that the dough can be stretched with oiled fingers so thin that you can see the work surface through it. Small tears do not matter; the banana covers them. Fry over medium heat, otherwise the egg layer inside stays runny.

The savory relative from Malaysia with curry is in the recipe for Roti Canai. Another banana dessert is Ba Si Xiang Jiao with caramel. A glass of Cha Yen goes well with the roti.

Ingredients

    For the dough:

    • 250 g all-purpose flour (type 550)
    • 1 egg
    • 100 ml lukewarm water
    • 1 tbsp sweetened condensed milk
    • 1 tsp sugar
    • 1/2 tsp salt
    • 80 ml vegetable oil for resting

    For the filling and topping:

    • 3 ripe bananas
    • 2 eggs
    • 60 g butter
    • 100 g sweetened condensed milk
    • 2 tbsp sugar

    Instructions

    1. Stir the egg, water, 1 tbsp condensed milk, sugar and salt together. Add the flour and knead everything for 10 minutes into a smooth, soft dough.
    2. Divide the dough into 4 balls. Put them in a dish, pour the oil over them and turn them until they are coated all over. Cover the dish and let the balls rest for 2 hours.
    3. Cut the bananas into 5 mm slices. Whisk the eggs.
    4. Oil the work surface. Press a ball flat and stretch it with your fingers from the middle outward into a sheet 35 cm in diameter.
    5. Heat 15 g butter in a large pan over medium heat. Lay the dough sheet in it.
    6. Put a quarter of the bananas in the middle and pour a quarter of the eggs over them. Fold the edges from four sides over the filling into a square.
    7. Fry the roti for 2 to 3 minutes, flip it and fry the second side for 2 to 3 minutes, until both sides are golden brown and crisp.
    8. Cut the roti into 9 squares, drizzle 25 g condensed milk over it and sprinkle on sugar. Cook the other three rotis the same way.
